4 Regal Springs tilapia fillets
2 large potatoes
2 sweet potatoes
Olive oil
Panko flour
3-4 eggs
Flour
1 tsp butter

Preparation

  1. Preheat the oven to 220°C.
    Peel the potatoes and sweet potatoes and cut them into small, oblong strips. Drizzle with a little olive oil and season with salt and pepper. Spread in a single layer on a baking sheet and bake in the oven until the fries are crispy. This takes about 20 minutes.
  2. Meanwhile, melt the butter in a pan and briefly fry the panko flour until it turns a light brown color.Season with salt and pepper if desired.
  3. Whisk the eggs and season with a little salt and pepper.
  4. Now roll the thawed (and dried with a kitchen towel) tilapia first in flour, then in the beaten eggs and then in the panko flour.
  5. Put the breaded fillets in the oven with the fries and bake for about 10-15 minutes until they are completely cooked.
