4 Regal Springs tilapia fillets
2 large potatoes
2 sweet potatoes
Olive oil
Panko flour
3-4 eggs

Preparation
- Preheat the oven to 220°C.
Peel the potatoes and sweet potatoes and cut them into small, oblong strips. Drizzle with a little olive oil and season with salt and pepper. Spread in a single layer on a baking sheet and bake in the oven until the fries are crispy. This takes about 20 minutes. - Meanwhile, melt the butter in a pan and briefly fry the panko flour until it turns a light brown color.Season with salt and pepper if desired.
- Whisk the eggs and season with a little salt and pepper.
- Now roll the thawed (and dried with a kitchen towel) tilapia first in flour, then in the beaten eggs and then in the panko flour.
- Put the breaded fillets in the oven with the fries and bake for about 10-15 minutes until they are completely cooked.
